If you run a restaurant, food truck, cafeteria, or any commercial kitchen in New York, there’s a good chance you have fire extinguishers on the wall. There’s also a good chance at least one of them is a standard red ABC unit — and a reasonable chance you’ve assumed that’s enough.
It isn’t. Not for a kitchen. Not under New York fire code. And not in the real world, where grease fires behave very differently from the fires that ABC extinguishers are actually designed to handle.
Here’s what you need to know about Class K fire extinguishers, why they’re required, and what the wrong extinguisher can actually do to a grease fire.
ABC Fire Extinguisher vs. Class K: Why the Wrong Choice Makes a Grease Fire Worse
The instinct to reach for an ABC extinguisher makes sense. They’re everywhere, they’re versatile, and they cover ordinary combustibles, flammable liquids, and electrical fires. For most commercial spaces, they’re the right call.
A commercial kitchen is not most commercial spaces.
When you discharge an ABC dry chemical extinguisher into a burning fryer, you’re not suppressing the fire — you’re potentially spreading it. The dry powder in an ABC unit is denser than cooking oil. Instead of forming a protective layer on the surface of the burning fuel, it sinks through the oil, displaces burning liquid upward and outward, and can scatter flaming grease across your kitchen. What started as a contained fryer fire can become a kitchen-wide emergency in seconds.
Why ABC Dry Chemical Fails on High-Temperature Cooking Oil Fires
The problem isn’t just the density mismatch. It’s also temperature. Commercial cooking oils — the vegetable oils, animal fats, and shortening used in deep fryers and on flat tops — reach temperatures well above 600°F during normal operation. ABC dry chemical agents are not engineered to cool fuel at that temperature range. Even when the flames are knocked down initially, the oil remains hot enough to re-ignite the moment the chemical dissipates. You’ve suppressed the visible fire, but you haven’t actually solved the problem.
Class K extinguishers work on an entirely different principle. They discharge a wet chemical agent — typically potassium acetate or potassium citrate — as a fine, low-pressure mist. That fine mist matters: it’s specifically designed to avoid splashing hot grease, which is exactly what a pressurized discharge into a deep fryer would otherwise do.
When the wet chemical contacts burning cooking oil, it triggers a reaction called saponification. The alkaline agent reacts with the fatty acids in the oil and forms a soapy foam layer over the surface of the burning fuel. That foam blanket does three things at once: it cuts off the oxygen supply to the fire, it rapidly cools the oil below its auto-ignition temperature, and it creates a barrier that prevents re-ignition. It doesn’t just knock the fire down — it keeps it down.
This is why NFPA 10 specifically mandates Class K extinguishers for commercial cooking operations. It’s not a bureaucratic preference. It reflects the actual chemistry of how grease fires behave and what it takes to stop them safely.
Types of Extinguishers: A Quick Reference for Commercial Kitchen Operators
Understanding where Class K fits means understanding the broader classification system. Fire extinguishers are rated by the type of fire they’re designed to handle, and each class addresses a fundamentally different kind of fuel.
Class A covers ordinary combustibles — wood, paper, cloth, most plastics. These are the fires you’d expect in a storage room or office. Class B is for flammable liquids: gasoline, paint, solvents. Class C covers energized electrical equipment. Class D is a specialty rating for combustible metals, mostly relevant in industrial or laboratory settings.
Class K is the commercial cooking category. It exists specifically because cooking oils and animal fats at high temperatures behave differently from other flammable liquids — and because the agents that work on Class B fires don’t work the same way on cooking media.
That last point is worth pausing on. Cooking oils are technically flammable liquids, which leads some operators to assume a Class B extinguisher covers their kitchen. It doesn’t. Class B extinguishers are designed for fuel types with lower flash points, and they don’t produce the saponification reaction that’s essential for controlling a high-temperature cooking oil fire. A Class B unit in front of a commercial fryer is the right category in the wrong application.
The visual difference is easy to remember: Class K extinguishers are typically silver or chrome, not red. If you walk into a commercial kitchen and every extinguisher on the wall is red, that’s worth a second look.
Class K Fire Extinguisher Requirements Under New York Fire Code
NFPA 10 — the national standard for portable fire extinguishers — requires Class K units for any commercial cooking operation involving combustible cooking media. That includes restaurants, cafeterias, hotel kitchens, hospital food service, school cafeterias, catering halls, and food trucks. If you’re cooking with oil or animal fat at commercial temperatures, the standard applies.
In New York, the requirements go further. The FDNY enforces specific placement, inspection, and service rules that don’t apply in most other markets — and the consequences of getting them wrong are real.
Where Does a Class K Fire Extinguisher Need to Be Placed in a Restaurant?
NFPA 10 requires that Class K extinguishers be placed within 30 feet of travel distance from any commercial cooking appliance. That’s walking distance, not straight-line measurement. In a large kitchen with a long cooking line, that typically means more than one unit. The standard is that any employee standing at any fryer, range, or griddle should be able to reach a Class K unit within 30 feet of actual movement through the space.
Placement also matters in terms of access. The extinguisher needs to be visible, clearly labeled, and positioned so that someone can grab it without reaching over the cooking hazard itself. Mounting height matters too — FDNY guidelines specify a maximum mounting height of five feet. An extinguisher mounted too high, tucked behind a door, or blocked by equipment can result in a failed inspection even if the unit itself is fully charged and up to date.
One question we hear regularly from restaurant operators: “I already have a hood suppression system — do I still need a Class K extinguisher?” The answer is yes, unambiguously. NFPA 10 requires both. The hood suppression system activates automatically and handles suppression from above the cooking equipment. The portable Class K extinguisher is required in addition to that system — not instead of it. It covers areas outside the hood’s suppression zone and provides a manual backup if needed after the automatic system has activated.
FDNY Compliance for Class K Extinguishers in New York
For restaurant operators in New York, there’s a layer of compliance that doesn’t exist in most other markets. Under 3 RCNY Section 115-02, only companies on the FDNY’s approved list may sell and service portable fire extinguishers in the five boroughs. Only FDNY-issued numbered tags and decals are acceptable proof of inspection. If your extinguishers were serviced by a company that isn’t on that list — even a legitimate-looking company that issued you a tag — those tags are invalid. That’s a violation in itself, on top of any underlying equipment issues.
This matters more than it might seem. A rash of unscrupulous vendors issuing bogus inspection tags contributed to real fires and real injuries before the NYC Fire Code was updated to close that gap. The FDNY’s approved company list is updated every 30 days and is publicly verifiable. It’s worth checking.
NYC restaurants seating 75 or more receive quarterly FDNY inspections — a frequency that exceeds what most operators outside the city are used to. That inspection cadence means compliance gaps surface faster, and violations need to be cleared quickly. As of July 17, 2023, the FDNY also requires that technicians servicing wet chemical fire suppression systems hold an S-17 Certificate of Fitness specific to the brand of equipment they’re working on. That’s a significant update that caught some operators off guard, particularly those whose hood suppression systems and extinguisher service were handled by different vendors.
For operators throughout New York State, NFPA 10 and New York State fire code still govern Class K requirements, and the same fundamental placement and inspection standards hold. Annual certified maintenance is required regardless of jurisdiction. Monthly visual inspections — checking the pressure gauge, tamper seal, and physical condition — are also required under NFPA 10 and are the operator’s responsibility between certified service visits.
